The numbers that decide which one to buy
Interior dimensions, not litres. The question is whether a 9 × 13 inch pan fits. Stated volume does not answer it.
Convection. A fan cuts cooking time by roughly 25 per cent and evens out hot spots. Recipes written for a conventional oven need about 25°F taken off.
Temperature accuracy. Small ovens swing more than large ones. A unit that overshoots by 50°F will burn the top of anything before the centre is done.
