Times assume a free-form loaf about 3 inches deep, uncovered, in a fully preheated oven. Every row ends the same way: pull it when the centre reads 160°F.
Why thickness beats weight
Heat enters a loaf from every side at once, so cooking time tracks thickness far more closely than weight. A 2 lb loaf shaped 3 inches deep and a 2 lb loaf pressed flat into a sheet pan can finish forty minutes apart. The per-pound rule works because most people shape meatloaf the same way, not because weight itself drives the physics.
The practical consequence: use 30 minutes per pound to decide when to start checking, not when to stop cooking. For a 2 lb loaf that means opening the oven at 55 minutes, not at 60.

How to check it properly
Slide an instant-read probe in from the end of the loaf, horizontally, so the tip sits in the geometric centre. Probing from the top risks pushing through into the pan and reading hot metal instead of meat. If two readings an inch apart disagree, believe the lower one.
Ground beef is mixed meat: bacteria that would sit on the surface of a steak are distributed through the whole loaf. That is why 160°F is the number that matters, and why a pink centre here is not a matter of preference. Carryover heat raises the centre by roughly 5°F during the rest, so pulling at 160°F and resting 10 minutes lands you just above it — safe and still juicy.
