Why “minutes per pound” is a rough rule, not a law
Weight is a convenient stand-in for the thing that actually governs cooking time, which is how far heat has to travel to reach the middle. Two loaves of identical weight can differ by forty minutes if one is a squat block and the other a long, shallow strip.
The per-pound rule works because most people shape meatloaf the same way — about 3 inches deep — not because weight itself drives the physics.
The practical consequence: use 30 minutes per pound to decide when to start checking, not when to stop cooking. For a 2 lb loaf that means opening the oven at 55 minutes, not at 60.
On doneness. The USDA puts the safe internal temperature for ground meat at 160°F. Time is a prediction; the thermometer is the answer. Take the reading in the thickest part of the loaf, away from the pan.

How to check it properly
Slide an instant-read probe in from the end of the loaf, horizontally, so the tip sits in the geometric centre. Probing from the top risks pushing through into the pan and reading hot metal instead of meat.
If two readings an inch apart disagree, believe the lower one.
Carryover heat raises the centre by roughly 5°F during the rest, so pulling at 160°F and resting 10 minutes lands you just above it: safe and still juicy.
The rest is not optional — cut straight away and the juice runs onto the board instead of staying in the slice.

What oven temperature is best?
350°F is the default for a reason: hot enough to brown, gentle enough that the centre catches up before the edges dry. 375°F saves around fifteen percent of the time and is a fair trade on a fattier mix.
Above 400°F the outside sets too early.
Does the meat mix change the time?
Barely. Fat content changes the texture and how much the loaf shrinks, not how fast heat reaches the middle. What it does change is your margin for error: a 93/7 mix goes from juicy to dry within a few degrees of 160°F.
Can I cook it from frozen?
You can, but plan on roughly fifty percent longer and check the centre carefully — the outside will look finished well before the middle is safe. Thawing overnight in the fridge gives a far more predictable result.
