Caffeine figures in particular are planning numbers, not measurements of the drink in front of
you. Extraction varies with the bean, the dose, the grind and the length of the pull, so real shots
differ from published averages by a wide margin. Guidance on daily intake, including the figure
commonly cited by the FDA, describes healthy adults; it does not apply uniformly to people who are
pregnant, taking medication, managing a heart condition, or under eighteen. If caffeine intake
matters to your health, speak to a doctor rather than working from a table.
Cooking times are predictions based on a stated shape, depth and oven temperature. Doneness is
decided by internal temperature, not by the clock. For ground meat the United States Department of
Agriculture puts the safe internal temperature at 160°F, and that figure governs every timing on
this site.
